Pasta Sauce


• 1lb Italian sausage
• 4 Tbsp chopped onion
• 2Tbsp minced garlic
• 1 bay leaf
• 1 tsp basil
• 1 tsp oregano
• 1 tsp sugar
• 1 tsp salt
•½ tsp ground pepper
•⅛ tsp cayenne pepper
• 24 oz water
• 1 12oz can tomato paste


Pre-portion bay leaf, basil, oregano, sugar, salt, pepper and cayenne in a small cup or bowl and set aside.

I use a sautéing pan but you can use pretty much any pan with a lid. Start cooking sausage and onions, when about half cooked add garlic. Continue cooking till there’s just a little bit pink left then stir in the rest of the spices. Continue cooking, stirring continuously till the meet is completely browned. Add add water and tomato paste then bring to boil. Reduce heat, cover and simmer for 1 hr stirring occasionally.

Start boiling water to cook noodles when there’s about 25min left on the sauce. I use spaghetti noodles but you can use whatever noodles you like. You can also substitute sausage with 2 chicken breast for a slightly healthier option. Cube the chicken and follow the same directions. img_4180
